Lettuce

Lettuce and other leafy greens are ideal vegetables to plant, especially if you're a salad type of person. To plant lettuce, scatter the seeds on the topsoil and keep the soil moist until the seeds germinate. Once the lettuce is a good three to four inches tall, cut the leaves, leaving an inch from the surface. This will bring about production of another set of leaves or harvest.
